Chocolate Whiskey Cake
Ingredients
- 12 Tablespoons butter, cubed
- 85 grams cocoa powder
- 1 1/2 cups brewed coffee
- 1/2 cup whiskey
- 200 grams sugar
- 156 grams brown sugar
- 240 grams flour
- 8 grams baking soda
- 3 grams salt
- 1/4 teaspoon black pepper
- pinch of cloves
- 3 eggs
- 2 teaspoons vanilla
- 1 cup mini semisweet chocolate chips
Directions
Heat the oven to 325° F. Butter a 10-inch springform pan. Dust with 2 Tablespoons of the cocoa powder.
In a saucepan over low heat, warm the coffee, whiskey, butter, and remaining cocoa powder, whisking occasionally, until the butter is melted. Whisk in the sugar and brown sugar until dissolved. Remove from the heat and cool completely.
In a bowl, combine the flour, salt, baking soda, salt, pepper, and cloves. In another bowl, whisk together the eggs and vanilla, then slowly whisk in the chocolate mixture. Add the dry ingredients and whisk to combine, then fold in the chocolate chips.
Pour the batter into the prepared pan and bake 55 - 65 minutes. Cool completely, then remove the sides.
